Sweet Pongal

Traditional south Indian sweet Pongal prepared during the harvest festival called Pongal/Sankranti. This is also prepared auspicious occasions and festivals.

Ingredients

  • 200 gms Raw Rice
  • 100 gms Moong Dal
  • 400 gms Jaggery
  • 100 ml Milk
  • 12 pieces Cashew nuts
  • 2 tbsp Raisins
  • 1 tbsp Cardamom powder
  • 6 tbsp Ghee

Instructions

  • Heat of 1 tbsp ghee in a cooker and roast dal over medium heat for couple of minutes. Dal should not change the color.
  • Once you feel the aroma of dal add rice and mix well (before adding, rinsed the rice couple of time). Let’s add 4 cups of water, one cup of milk and 1 tbsp ghee.
  • Let it cook for 5 whistles on a medium heat. Now in the pan add jaggery powdered, water (1/2 cup) and melt. Strain the jaggery syrup to collect any dirt.  Meanwhile in the pan melt 2 tbsp ghee and roast cashews and raisins.
  • Add the jaggery syrup to the cooked rice/dal and mix well. Finally add cardamom powder (1 tsp), roasted nuts and as much of ghee (2 tbsp) and mix well.
  • Cook for 5 more minutes in medium heat and turn off the heat.
