Sweet Pongal
Traditional south Indian sweet Pongal prepared during the harvest festival called Pongal/Sankranti. This is also prepared auspicious occasions and festivals.

- 200 gms Raw Rice
- 100 gms Moong Dal
- 400 gms Jaggery
- 100 ml Milk
- 12 pieces Cashew nuts
- 2 tbsp Raisins
- 1 tbsp Cardamom powder
- 6 tbsp Ghee
Heat of 1 tbsp ghee in a cooker and roast dal over medium heat for couple of minutes. Dal should not change the color.
Once you feel the aroma of dal add rice and mix well (before adding, rinsed the rice couple of time). Let’s add 4 cups of water, one cup of milk and 1 tbsp ghee.
Let it cook for 5 whistles on a medium heat. Now in the pan add jaggery powdered, water (1/2 cup) and melt. Strain the jaggery syrup to collect any dirt. Meanwhile in the pan melt 2 tbsp ghee and roast cashews and raisins.
Add the jaggery syrup to the cooked rice/dal and mix well. Finally add cardamom powder (1 tsp), roasted nuts and as much of ghee (2 tbsp) and mix well.
Cook for 5 more minutes in medium heat and turn off the heat.
