Vada Curry
Vada curry is the most favorite in south Indian dish, which is made with fried masala Vada. Vada Curry is a best side dish for idly, dosa, Chapathi and lot more. There are many types of Vada but the mostly two is very familiar, Medhu Vada and Masal Vada. This is accompany of all the variety recipes for breakfast. This recipe made with masla Vada.

Ingredients
- 1 cup Channa Dal
- 1 tbsp Fennel seeds
- 1 Bea leaf
- 1 stick Cinnamon
- 2 Cardamom
- 4 piece Claves
- 3 Onion
- 2 Tomato
- Ginger small piece
- 1/4 tbsp Asafetida
- 1 tbsp Ginger Garlic paste
- 1 tbsp Garam masala
- 1 tbsp Coriander powder
- 2 tbsp Red chili Powder
- 5 Green Chili
- Curry leaves
- Coriander leaves
- Salt to taste
- 3 cups Water
Instructions
- Soak the chinna dal for 1 ½hours, drain the water and transfer it to the mixer also add the fennel seeds,green chilies (2 piece), Ginger small piece, Asafetida and salt. Grind to coarse paste. The Vada mix is ready.
- Heat a pan with oil fry the Vada mix in oil until golden. Break them into a small pieces and keep it aside.
- How to make Vada curry:Heat an oil in pan and add Fennel seeds, Bea leaf, Cinnamon, Cardamom, and Claves and add the onion, somesalt and sauté 3 mins. The onion turns the golden, add green chilies (3 piece),Ginger garlic paste, Turmeric powder, Red Chili powder, Coriander powder and Garam masala powder.
- Mix it all, add Chopped tomatoes with some water. Cook until turns the paste. Now add the broken Vada’s into the gravy. Cook for 5 minutes
- Turn off the heat. Finally add Curry leaves and coriander leaves for garnishing.
- Now our delicious Vada curry is ready.
