Chicken Ghee Roast Recipe

 

Chicken Ghee Roast Recipe is a mouth watering dish which looks and tastes wonderful. Inthis recipe we are going to dry roast the chicken pieces in ghee, this is Mangalorean style of making chicken. Chicken Ghee Roast is a delicious recipe had along with rice, roti, Chapathi and a lot more. This chicken is going to behighly aromatic because of the ghee and the fresh masala. Since we are going to use ghee for roasting the flavor of the recipe is enhanced several folds.  This chicken ghee roast is an excellent side dish for rice varieties. The masala gets roasted very well and clings on to the chicken pieces. Also since this is chicken dry roast we don'thave to add water while cooking the chicken pieces, the added yogurt provides sufficient moisture for cooking the chicken while roasting the chicken pieces in ghee over a low flame adds a nice texture and taste to the roasted chicken.

Ingredients

  • 1 Kg Chicken
  • 10 Kashmiri Chilies
  • 1 tbsp Coriander seeds
  • 2 tbsp Cumin seeds
  • 1 tbsp Fennel seeds
  • 1 tbsp Pepper corns
  • 6 pieces Dry red chilies
  • 2 pieces Ginger
  • 4 pieces Cloves Garlic
  • 2 tbsp Lemon juice
  • 1/2 tbsp Turmeric powder
  • 4 tbsp Yogurt
  • 1/4 cup Ghee
  • 1 pieces Onion Chopped
  • 1 tbsp Jaggery
  • Curryleaves for garnishing
  • Salt for taste

Instructions

  • Heat a pan medium flame dry roast Kashmiri chili separately. Then in same pan roast coriander seeds, cumin seeds, Fennel seeds, Pepper corns and dry chilies.
  • Grind the roosted ingredients along with a piece of ginger, garlic, lemon juice and required water and grind it into smooth and a thick paste.
  • Cleanthe chicken and cut them medium size pieces. Add the ground paste, turmeric powder, Yogurt and required salt and mix the chicken well with masala.
  • Keep it to marinate chicken for a minimum 1hour.
  • Heat pan in medium flame add 1/4 cup ghee and add chopped onion a pinch of salt and sauté for 3 mins.
  • Add the marinate chicken pieces and add small pieces for jaggery or a tbsp of sugar to get a balanced taste and cook until the chicken it fully done. Stir the pieces between.
  • Chicken will have a crispy texture on the outside when it fully done. Finally add some curry leaves and turn off the heat.
